Description

Make delicious and healthy pumpkin bread at home. This recipe is simple and satisfying.


Ingredients

Scale
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, combine pumpkin puree, maple syrup, coconut oil, eggs, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in walnuts, if using.
  6. Pour batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Adjust spices to your preference.
  • Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
  • You can substitute other nuts for walnuts.
