- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 3/4 cup packed brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh strawberries, diced
- 2 tablespoons strawberry jam
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking pan.
- In a large bowl, combine rolled oats, flour, brown sugar, baking soda, and salt.
- Stir in melted butter and vanilla extract until well combined.
- Press half of the oat mixture into the prepared baking pan.
- In a separate bowl, combine diced strawberries and strawberry jam. Spread evenly over the oat mixture in the pan.
- Crumble the remaining oat mixture over the strawberry layer.
- Bake for 20-25 minutes, or until golden brown.
- Let cool completely before cutting into bars.
Notes
- Use gluten-free oats and flour for a gluten-free version.
- You can substitute other berries for the strawberries.
- Store in an airtight container at room temperature for up to 3 days.
