Description

Easy and delicious strawberry oatmeal bars, perfect for a healthy snack or breakfast.


Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, diced
  • 2 tablespoons strawberry jam

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, combine rolled oats, flour, brown sugar, baking soda, and salt.
  3. Stir in melted butter and vanilla extract until well combined.
  4. Press half of the oat mixture into the prepared baking pan.
  5. In a separate bowl, combine diced strawberries and strawberry jam. Spread evenly over the oat mixture in the pan.
  6. Crumble the remaining oat mixture over the strawberry layer.
  7. Bake for 20-25 minutes, or until golden brown.
  8. Let cool completely before cutting into bars.

Notes

  • Use gluten-free oats and flour for a gluten-free version.
  • You can substitute other berries for the strawberries.
  • Store in an airtight container at room temperature for up to 3 days.
