A flavorful and healthy white chicken chili recipe.
Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 lb boneless, skinless chicken breasts, cooked and shredded
- 4 cups chicken broth
- 1 (15-ounce) can great northern beans, rinsed and drained
- 1 (4-ounce) can diced green chilies
- 1 tsp cumin
- 1/2 tsp oregano
- 1/4 tsp cayenne pepper (optional)
- Salt and pepper to taste
- Optional toppings: sour cream, shredded cheese, avocado, cilantro
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and green bell pepper and cook for another 2 minutes.
- Stir in shredded chicken, chicken broth, great northern beans, diced green chilies, cumin, oregano, and cayenne pepper (if using).
- Bring to a simmer and cook for 15-20 minutes, or until flavors have melded.
- Season with salt and pepper to taste.
- Serve hot with your favorite toppings.
Notes
- For a thicker chili, mash some of the beans before adding them to the pot.
- Adjust the amount of cayenne pepper to your liking.
- You can use canned chicken instead of cooking your own.
