Ingredients

  • 6 large banana peppers
  • 1 pound Italian sausage, removed from casings
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 egg, lightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15 ounce) can tomato sauce

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cut a lengthwise slit in each banana pepper and remove seeds.
  3. In a bowl, combine sausage, bread crumbs, Parmesan cheese, parsley, garlic, egg, salt, and pepper.
  4. Stuff each banana pepper with the sausage mixture.
  5. Place stuffed peppers in a baking dish and pour tomato sauce over them.
  6. Bake for 30-40 minutes, or until peppers are tender and sausage is cooked through.

Notes

  • For spicier peppers, leave some seeds in.
  • You can use sweet or hot Italian sausage.
  • Serve with extra tomato sauce or a side of pasta.
