A creamy and flavorful soup with sausage, kale, and potatoes.
Ingredients

- 1 pound Italian sausage, casings removed
- 1 onion, chopped
- 2 cloves garlic, minced
- 6 cups chicken broth
- 4 cups water
- 1 pound russet potatoes, peeled and cubed
- 1 bunch kale, stemmed and chopped
- 1 cup heavy cream
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Brown sausage in a large pot over medium heat. Drain excess grease.
- Add onion and garlic to the pot and cook until softened, about 5 minutes.
- Pour in chicken broth and water. Bring to a boil.
- Add potatoes and cook until tender, about 15 minutes.
- Stir in kale and cook until wilted, about 5 minutes.
- Reduce heat and stir in heavy cream. Season with salt, pepper, and red pepper flakes (if using).
- Simmer for 5 minutes before serving.
Notes
- For a spicier soup, use hot Italian sausage.
- You can substitute spinach for kale.
- Add more broth if you prefer a thinner soup.
