Description

A creamy and flavorful soup with sausage, kale, and potatoes.


Ingredients

Scale
  • 1 pound Italian sausage, casings removed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 4 cups water
  • 1 pound russet potatoes, peeled and cubed
  • 1 bunch kale, stemmed and chopped
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Brown sausage in a large pot over medium heat. Drain excess grease.
  2. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in chicken broth and water. Bring to a boil.
  4. Add potatoes and cook until tender, about 15 minutes.
  5. Stir in kale and cook until wilted, about 5 minutes.
  6. Reduce heat and stir in heavy cream. Season with salt, pepper, and red pepper flakes (if using).
  7. Simmer for 5 minutes before serving.

Notes

  • For a spicier soup, use hot Italian sausage.
  • You can substitute spinach for kale.
  • Add more broth if you prefer a thinner soup.
