Description

Make your own crunchy, low-carb keto cereal at home.

Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup sweetener (e.g., erythritol, stevia)
  • 2 tablespoons coconut flour
  • 2 tablespoons chia seeds
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened almond milk
  • 1 tablespoon melted coconut oil

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine almond flour, sweetener, coconut flour, chia seeds, cinnamon, baking powder, and salt.
  3. Add almond milk and melted coconut oil. Mix well.
  4. The dough should be thick. If too dry, add a bit more almond milk.
  5. Place the dough between two sheets of parchment paper and roll it out thinly.
  6. Remove the top sheet of parchment paper and cut the dough into small squares or desired cereal shapes.
  7. Transfer the parchment paper with the cereal pieces to a baking sheet.
  8. Bake for 10-15 minutes, or until golden brown and crispy.
  9. Let cool completely before serving.

Notes

  • Store in an airtight container to maintain crispness.
  • Adjust sweetener to your taste.
  • For a chocolate version, add 1-2 tablespoons of unsweetened cocoa powder.
