- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon fresh thyme leaves (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss carrots with olive oil, balsamic vinegar, honey, salt, pepper, and thyme (if using).
- Spread carrots in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until tender and slightly caramelized.
- Serve immediately.
Notes
- Adjust honey and balsamic vinegar to your taste.
- For extra caramelization, broil for the last 2 minutes.
