Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 cup chopped fresh peaches
  • For the Cream Cheese Frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tbsp honey

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Alternately add dry ingredients and buttermilk to the wet ingredients, beginning and ending with dry ingredients. Mix until just combined.
  5. Fold in chopped peaches.
  6. Fill cupcake liners about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cupcakes cool in the tin for a few minutes before transferring to a wire rack to cool completely.
  9. For the Cream Cheese Frosting: In a bowl, beat together cream cheese and butter until smooth. Gradually add powdered sugar, beating until light and fluffy. Stir in honey.
  10. Frost cooled cupcakes with cream cheese frosting.

Notes

  • For best results, use ripe but firm peaches.
  • Store frosted cupcakes in the refrigerator.
