Description

Hearty and flavorful keto beef stew. Enjoy a comforting, low-carb meal.


Ingredients

Scale
  • 2 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 cups beef broth
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 cup chopped mushrooms
  • 1/2 cup chopped turnips
  • 1/4 cup tomato paste
  • Salt and pepper to taste

Instructions

  1. Season beef with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat. Brown beef in batches.
  3. Add onion and garlic to the pot and cook until softened.
  4. Stir in thyme, rosemary, and tomato paste. Cook for 1 minute.
  5. Pour in beef broth and bring to a boil.
  6. Reduce heat, add celery, carrots, mushrooms and turnips. Simmer for 2-3 hours, or until beef is tender.
  7. Adjust seasoning to taste.
  8. Serve hot.

Notes

  • For a thicker stew, add 1/4 tsp of xanthan gum in the last 30 minutes of cooking.
  • You can use other low-carb vegetables, such as cauliflower or zucchini.
