Hearty and flavorful keto beef stew. Enjoy a comforting, low-carb meal.
Ingredients

- 2 lbs beef chuck, cubed
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 4 cups beef broth
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 cup chopped mushrooms
- 1/2 cup chopped turnips
- 1/4 cup tomato paste
- Salt and pepper to taste
Instructions
- Season beef with salt and pepper.
- Heat olive oil in a large pot over medium-high heat. Brown beef in batches.
- Add onion and garlic to the pot and cook until softened.
- Stir in thyme, rosemary, and tomato paste. Cook for 1 minute.
- Pour in beef broth and bring to a boil.
- Reduce heat, add celery, carrots, mushrooms and turnips. Simmer for 2-3 hours, or until beef is tender.
- Adjust seasoning to taste.
- Serve hot.
Notes
- For a thicker stew, add 1/4 tsp of xanthan gum in the last 30 minutes of cooking.
- You can use other low-carb vegetables, such as cauliflower or zucchini.
