Enjoy a flavorful and healthy keto-friendly cauliflower fried rice. This recipe is a great alternative to traditional fried rice, low in carbs and packed with nutrients.

- 1 large head of cauliflower, riced (about 4 cups)
- 2 tablespoons coconut aminos
- 1 tablespoon sesame oil
- 1 cup cooked chicken or shrimp, diced
- 1/2 cup diced carrots
- 1/2 cup diced peas
- 2 green onions, sliced
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 egg, lightly beaten
- Salt and pepper to taste
Instructions
- Prepare the cauliflower rice. You can use a food processor or a grater.
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add garlic and ginger and cook for 1 minute until fragrant.
- Add carrots and peas and cook for 3-4 minutes until slightly softened.
- Push vegetables to one side of the skillet and pour the beaten egg into the empty space. Scramble the egg and then mix it with the vegetables.
- Add the cauliflower rice and coconut aminos to the skillet. Stir-fry for 5-7 minutes until the cauliflower rice is tender.
- Add the cooked chicken or shrimp and green onions. Stir-fry for another 2-3 minutes until heated through.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
- You can add other vegetables like bell peppers or broccoli.
- For a spicier dish, add a pinch of red pepper flakes.
- Store leftovers in the refrigerator for up to 3 days.
