Description

Enjoy a flavorful and healthy keto-friendly cauliflower fried rice. This recipe is a great alternative to traditional fried rice, low in carbs and packed with nutrients.


Ingredients

  • 1 large head of cauliflower, riced (about 4 cups)
  • 2 tablespoons coconut aminos
  • 1 tablespoon sesame oil
  • 1 cup cooked chicken or shrimp, diced
  • 1/2 cup diced carrots
  • 1/2 cup diced peas
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 egg, lightly beaten
  • Salt and pepper to taste

Instructions

  1. Prepare the cauliflower rice. You can use a food processor or a grater.
  2. Heat sesame oil in a large skillet or wok over medium-high heat.
  3. Add garlic and ginger and cook for 1 minute until fragrant.
  4. Add carrots and peas and cook for 3-4 minutes until slightly softened.
  5. Push vegetables to one side of the skillet and pour the beaten egg into the empty space. Scramble the egg and then mix it with the vegetables.
  6. Add the cauliflower rice and coconut aminos to the skillet. Stir-fry for 5-7 minutes until the cauliflower rice is tender.
  7. Add the cooked chicken or shrimp and green onions. Stir-fry for another 2-3 minutes until heated through.
  8. Season with salt and pepper to taste.
  9. Serve immediately.

Notes

  • You can add other vegetables like bell peppers or broccoli.
  • For a spicier dish, add a pinch of red pepper flakes.
  • Store leftovers in the refrigerator for up to 3 days.
