Ingredients

  • 1 whole chicken (about 4 lbs)
  • 1 lb carrots, peeled and chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp dried thyme

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss carrots with 1 tbsp olive oil, salt, and pepper.
  3. Place carrots in a single layer on the bottom of a roasting pan.
  4. In a small bowl, combine remaining 1 tbsp olive oil, garlic powder, paprika, and thyme.
  5. Rub the mixture all over the chicken.
  6. Place chicken on top of the carrots in the roasting pan.
  7. Roast for 1 hour and 15 minutes, or until chicken is cooked through and juices run clear when pierced with a fork.
  8. Let chicken rest for 10 minutes before carving and serving.

Notes

  • Adjust seasoning to your preference.
  • For extra crispy skin, broil for the last 5 minutes.
