- 1 whole chicken (about 4 lbs)
- 1 lb carrots, peeled and chopped
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp dried thyme
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss carrots with 1 tbsp olive oil, salt, and pepper.
- Place carrots in a single layer on the bottom of a roasting pan.
- In a small bowl, combine remaining 1 tbsp olive oil, garlic powder, paprika, and thyme.
- Rub the mixture all over the chicken.
- Place chicken on top of the carrots in the roasting pan.
- Roast for 1 hour and 15 minutes, or until chicken is cooked through and juices run clear when pierced with a fork.
- Let chicken rest for 10 minutes before carving and serving.
Notes
- Adjust seasoning to your preference.
- For extra crispy skin, broil for the last 5 minutes.
- You can add other vegetables like broccoli or Brussels sprouts.
