- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 large head cauliflower, cut into florets
- 4 oz cream cheese, softened
- 2 tbsp butter
- 1/4 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, brown ground beef over medium-high heat. Drain excess grease.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in beef broth, tomato paste, thyme, rosemary, salt, and pepper. Bring to a simmer and cook for 10 minutes, or until sauce has thickened.
- While the beef mixture simmers, steam or boil cauliflower until tender.
- Drain cauliflower well and transfer to a food processor or blender.
- Add cream cheese, butter, and heavy cream to the cauliflower. Blend until smooth and creamy. Season with salt and pepper to taste.
- Pour the beef mixture into a baking dish.
- Spread the cauliflower mash evenly over the beef mixture.
- Bake for 20-25 minutes, or until the cauliflower topping is golden brown.
- Let stand for 5-10 minutes before serving.
Notes
- You can add other vegetables to the beef mixture, such as carrots, celery, or peas.
- For a cheesier topping, sprinkle shredded cheddar cheese over the cauliflower mash before baking.
- Adjust seasonings to your preference.
