Description

A low-carb twist on classic comfort food. Enjoy a hearty shepherd’s pie with a creamy cauliflower mash topping.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large head cauliflower, cut into florets
  • 4 oz cream cheese, softened
  • 2 tbsp butter
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown ground beef over medium-high heat. Drain excess grease.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in beef broth, tomato paste, thyme, rosemary, salt, and pepper. Bring to a simmer and cook for 10 minutes, or until sauce has thickened.
  5. While the beef mixture simmers, steam or boil cauliflower until tender.
  6. Drain cauliflower well and transfer to a food processor or blender.
  7. Add cream cheese, butter, and heavy cream to the cauliflower. Blend until smooth and creamy. Season with salt and pepper to taste.
  8. Pour the beef mixture into a baking dish.
  9. Spread the cauliflower mash evenly over the beef mixture.
  10. Bake for 20-25 minutes, or until the cauliflower topping is golden brown.
  11. Let stand for 5-10 minutes before serving.

Notes

  • You can add other vegetables to the beef mixture, such as carrots, celery, or peas.
  • For a cheesier topping, sprinkle shredded cheddar cheese over the cauliflower mash before baking.
  • Adjust seasonings to your preference.
