A delicious and healthy Keto Sweet Potato Casserole.

- 3 cups cooked and mashed sweet potato
- 1/2 cup coconut flour
- 1/4 cup unsalted butter, melted
- 1/4 cup sweetener (Erythritol or Monk Fruit)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- Topping: 1/2 cup almond flour, 1/4 cup chopped pecans, 2 tablespoons melted butter, 2 tablespoons sweetener
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine mashed sweet potato, coconut flour, melted butter, sweetener, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix well.
- In a separate bowl, prepare the topping by combining almond flour, pecans, melted butter, and sweetener.
- Pour sweet potato mixture into a greased baking dish.
- Sprinkle topping evenly over the sweet potato mixture.
- Bake for 25-30 minutes, or until golden brown.
- Let cool slightly before serving.
Notes
- Adjust sweetener to your taste.
- Store leftovers in the refrigerator.
- For a smoother texture, use an electric mixer.
