Description

A delicious and healthy Keto Sweet Potato Casserole.


Ingredients

  • 3 cups cooked and mashed sweet potato
  • 1/2 cup coconut flour
  • 1/4 cup unsalted butter, melted
  • 1/4 cup sweetener (Erythritol or Monk Fruit)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • Topping: 1/2 cup almond flour, 1/4 cup chopped pecans, 2 tablespoons melted butter, 2 tablespoons sweetener

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine mashed sweet potato, coconut flour, melted butter, sweetener, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix well.
  3. In a separate bowl, prepare the topping by combining almond flour, pecans, melted butter, and sweetener.
  4. Pour sweet potato mixture into a greased baking dish.
  5. Sprinkle topping evenly over the sweet potato mixture.
  6. Bake for 25-30 minutes, or until golden brown.
  7. Let cool slightly before serving.

Notes

  • Adjust sweetener to your taste.
  • Store leftovers in the refrigerator.
  • For a smoother texture, use an electric mixer.
