Description

Ingredients

  • 2 tablespoon olive oil
  • 1 small carrot, diced (50g)
  • 2 celery stalks, diced (80g)
  • 1 small onion, diced (70g)
  • 2 garlic cloves, minced
  • 14 oz canned chopped tomatoes (400g)
  • 2 cups cherry tomatoes (300g)
  • 5 cups chicken broth (1.2 litre)
  • 1/4 cup fresh basil leaves, chopped (12g)
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large pan over medium heat. Add carrot, celery, and onion. Sauté for 3-4 minutes until soft. Add garlic for 1 minute until fragrant.
  2. Add fresh and canned tomatoes, chicken broth, salt, and pepper. Stir and bring to a boil, then reduce to a simmer for 10-15 minutes with the lid slightly ajar.
  3. Stir in chopped basil.
  4. Blend until smooth using a blender or hand blender. Adjust seasoning to taste.
