Description

Delicious and nutritious apple carrot oatmeal muffins perfect for kids.


Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup milk
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1 cup grated apple
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, combine oats, milk, applesauce, maple syrup, egg, and vanilla extract. Let sit for 10 minutes.
  3. Stir in grated carrots and apple.
  4. In a separate bowl, whisk together baking powder, baking soda, salt, and cinnamon.
  5. Add dry ingredients to wet ingredients and mix until just combined.
  6. Fill muffin liners about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • You can substitute honey for maple syrup.
  • Add nuts or seeds for extra texture and nutrition.
  • Store muffins in an airtight container at room temperature for up to 3 days or in the freezer for longer storage.
