Delicious and nutritious apple carrot oatmeal muffins perfect for kids.
Ingredients

- 1 1/2 cups rolled oats
- 1 cup milk
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1 cup grated apple
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, combine oats, milk, applesauce, maple syrup, egg, and vanilla extract. Let sit for 10 minutes.
- Stir in grated carrots and apple.
- In a separate bowl, whisk together baking powder, baking soda, salt, and cinnamon.
- Add dry ingredients to wet ingredients and mix until just combined.
- Fill muffin liners about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
Notes
- You can substitute honey for maple syrup.
- Add nuts or seeds for extra texture and nutrition.
- Store muffins in an airtight container at room temperature for up to 3 days or in the freezer for longer storage.
