Description

Hearty kielbasa potato soup is a comforting and flavorful meal.


Ingredients

Scale
  • 1 pound kielbasa sausage, sliced
  • 4 cups chicken broth
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and cubed
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot or Dutch oven, brown the kielbasa over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Pour in the chicken broth and water. Season with salt and pepper.
  4. Bring to a boil, then add the potatoes.
  5. Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  6. Stir in the cheddar cheese and sour cream until melted and smooth.
  7. Garnish with fresh parsley before serving.

Notes

  • Adjust the amount of salt and pepper to your taste.
  • For a thicker soup, mash some of the potatoes.
  • You can add other vegetables, such as carrots or celery.
