Hearty kielbasa potato soup is a comforting and flavorful meal.
Ingredients

- 1 pound kielbasa sausage, sliced
- 4 cups chicken broth
- 1 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and cubed
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot or Dutch oven, brown the kielbasa over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Pour in the chicken broth and water. Season with salt and pepper.
- Bring to a boil, then add the potatoes.
- Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the cheddar cheese and sour cream until melted and smooth.
- Garnish with fresh parsley before serving.
Notes
- Adjust the amount of salt and pepper to your taste.
- For a thicker soup, mash some of the potatoes.
- You can add other vegetables, such as carrots or celery.
