- 8 oz boneless, skinless chicken breasts
- 1 tbsp olive oil
- 4 oz fettuccine pasta
- 1 cup low-fat milk
- 1/4 cup grated Parmesan cheese
- 2 tbsp light cream cheese
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Cook fettuccine according to package directions.
- While pasta cooks, heat olive oil in a skillet over medium heat.
- Season chicken with salt and pepper, then cook until done.
- Remove chicken and set aside. Slice or shred.
- In the same skillet, sauté garlic until fragrant.
- Add milk and cream cheese, whisking until smooth.
- Stir in Parmesan cheese and season with salt and pepper.
- Add cooked pasta and chicken to the sauce. Toss to combine.
- Serve immediately.
