Description

A healthy and delicious low-carb alternative to traditional fried rice, using cauliflower rice.


Ingredients

Scale
  • 1 large head of cauliflower, riced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce (low sodium)
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Optional: Green onions for garnish

Instructions

  1. Prepare the cauliflower rice.
  2. Heat olive oil in a large skillet or wok.
  3. Add onion and garlic, cook until softened.
  4. Add mixed vegetables and cook for a few minutes.
  5. Push vegetables to one side and pour in beaten eggs. Scramble until cooked.
  6. Add cauliflower rice and soy sauce. Stir-fry until heated through.
  7. Stir in sesame oil. Season with salt and pepper.
  8. Garnish with green onions if desired. Serve immediately.

Notes

  • For best results, use cauliflower rice that has been squeezed dry to remove excess moisture.
  • Adjust soy sauce amount to your preference.
  • Add protein like chicken, shrimp, or tofu for a complete meal.
