Description

These Low Carb Iced Peanut Butter Bars are a delicious and satisfying treat. They are perfect for anyone following a low-carb or ketogenic diet.


Ingredients

Scale
  • 1 cup almond flour
  • 1/2 cup peanut butter
  • 1/4 cup erythritol
  • 1/4 cup butter, melted
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • Icing: 2 oz cream cheese, 2 tbsp peanut butter, 1/4 cup erythritol, 1 tbsp almond milk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix together almond flour, peanut butter, erythritol, melted butter, egg, and vanilla extract.
  3. Press the mixture into a baking pan.
  4. Bake for 15-20 minutes, or until golden brown.
  5. Let cool completely.
  6. For the icing, beat together cream cheese, peanut butter, erythritol, and almond milk until smooth.
  7. Spread icing over the cooled bars.
  8. Cut into bars and serve.
