Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss carrots with maple syrup, olive oil, salt, and pepper.
- Spread carrots in a single layer on a baking sheet.
- Roast for 20 minutes.
- Add cranberries and roast for another 5 minutes, or until carrots are tender.
- Serve warm.
