Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup maple syrup
  • 1/4 cup tahini
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup chopped apple

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, whisk together maple syrup, tahini, applesauce, egg, milk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the chopped apple.
  6. Fill muffin liners about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For gluten-free muffins, use a gluten-free all-purpose flour blend.
  • You can substitute other types of apples, such as Honeycrisp or Granny Smith.
  • Store muffins in an airtight container at room temperature for up to 3 days.
