Description

Flaky cod baked with Mediterranean flavors.


Ingredients

  • 1.5 lbs cod fillets
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1/2 red onion, sliced
  • 1/4 cup Kalamata olives, halved
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange vegetables in a baking dish.
  3. Place cod fillets on top of the vegetables.
  4. Drizzle with olive oil and lemon juice.
  5. Sprinkle with garlic, oregano, salt, and pepper.
  6. Bake for 15-20 minutes, or until cod is cooked through.
  7. Garnish with fresh parsley, if desired.

Notes

  • Adjust baking time depending on the thickness of the cod fillets.
  • You can add other vegetables like cherry tomatoes or artichoke hearts.
  • Serve with couscous or quinoa.
