Ingredients

- 1.5 lbs cod fillets
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1/2 red onion, sliced
- 1/4 cup Kalamata olives, halved
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Arrange vegetables in a baking dish.
- Place cod fillets on top of the vegetables.
- Drizzle with olive oil and lemon juice.
- Sprinkle with garlic, oregano, salt, and pepper.
- Bake for 15-20 minutes, or until cod is cooked through.
- Garnish with fresh parsley, if desired.
Notes
- Adjust baking time depending on the thickness of the cod fillets.
- You can add other vegetables like cherry tomatoes or artichoke hearts.
- Serve with couscous or quinoa.
