- 1 cup dried apricots, chopped
- 1 cup almond flour
- 1/2 cup all-purpose flour

- 1/4 cup unsalted butter, softened
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon almond extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a cake pan.
- In a bowl, combine dried apricots, almond flour, all-purpose flour, sugar, softened butter, eggs, milk, almond extract, baking powder, and salt.
- Mix until well combined.
- Pour batter into prepared pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.
