Description

Ingredients

  • 1 cup dried apricots, chopped
  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon almond extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a bowl, combine dried apricots, almond flour, all-purpose flour, sugar, softened butter, eggs, milk, almond extract, baking powder, and salt.
  3. Mix until well combined.
  4. Pour batter into prepared pan.
  5. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.
