Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, oats, baking soda, baking powder, salt, and cinnamon.
  3. In a separate bowl, combine applesauce, milk, oil, brown sugar, egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fill muffin cups about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • You can add nuts or dried fruit to the batter for extra flavor and texture.
