- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups grated zucchini
Cream Cheese Frosting:
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp milk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- In a separate bowl, combine oil, sugar, eggs, and vanilla. Beat well.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Stir in the grated zucchini.
- Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely before frosting.
Cream Cheese Frosting:
- In a medium bowl, beat cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar, beating until well combined.
- Stir in vanilla extract.
- Add milk, 1 tablespoon at a time, until frosting reaches desired consistency.
- Spread frosting evenly over cooled zucchini bars.
- Cut into squares and serve.
Notes
- For best results, squeeze out excess moisture from the grated zucchini before adding it to the batter.
- Store leftover bars in an airtight container in the refrigerator.
