Description

Enjoy these incredibly moist zucchini bars topped with a tangy cream cheese frosting. They are perfect for a snack or dessert.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups grated zucchini

Cream Cheese Frosting:

  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. In a separate bowl, combine oil, sugar, eggs, and vanilla. Beat well.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Stir in the grated zucchini.
  6. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bars cool completely before frosting.

Cream Cheese Frosting:

  1. In a medium bowl, beat cream cheese and butter until smooth and creamy.
  2. Gradually add the powdered sugar, beating until well combined.
  3. Stir in vanilla extract.
  4. Add milk, 1 tablespoon at a time, until frosting reaches desired consistency.
  5. Spread frosting evenly over cooled zucchini bars.
  6. Cut into squares and serve.

Notes

  • For best results, squeeze out excess moisture from the grated zucchini before adding it to the batter.
  • Store leftover bars in an airtight container in the refrigerator.
