Description

Enjoy healthy and delicious No Sugar Greek Yogurt Muffins. They are perfect for breakfast or a snack.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup plain Greek yogurt
  • 1/4 cup unsweetened applesauce
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup erythritol

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line a muffin tin with paper liners.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, combine Greek yogurt, applesauce, eggs, vanilla extract, and erythritol.
  5. Add wet ingredients to dry ingredients. Mix until just combined.
  6. Fill muffin liners 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • You can add berries or nuts to the batter.
  • Store muffins in an airtight container at room temperature for up to 3 days.
