- 1 pound Italian sausage, removed from casing
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (9 ounce) package refrigerated cheese tortellini
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Drain any excess grease.
- Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
- Pour in the chicken broth and diced tomatoes. Bring to a simmer.
- Add the cheese tortellini and cook according to package directions, usually about 3-5 minutes.
- Stir in the heavy cream and Parmesan cheese until well combined and heated through.
- Add the chopped spinach and cook until wilted, about 1 minute.
- Season with salt and pepper to taste.
