Description

This is a simple one-pot Spanish paella recipe. Enjoy a flavorful and easy-to-make meal.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup paella rice
  • 1/2 tsp saffron threads
  • 1 tsp smoked paprika
  • 4 cups chicken broth
  • 1/2 lb chorizo, sliced
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 cup frozen peas
  • Lemon wedges, for serving

Instructions

  1. Heat olive oil in a large pot or paella pan over medium heat.
  2. Add onion, garlic, and red bell pepper and cook until softened, about 5 minutes.
  3. Stir in paella rice, saffron threads, and smoked paprika. Cook for 1 minute.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat to low, add chorizo, and simmer for 15 minutes.
  6. Add shrimp and peas and cook until shrimp are pink and cooked through, about 5 minutes.
  7. Remove from heat and let stand for 5 minutes.
  8. Serve with lemon wedges.

Notes

  • Adjust the amount of saffron to your preference.
  • You can use other types of seafood, such as mussels or clams.
  • For a vegetarian option, omit the chorizo and shrimp and add more vegetables.
