Description
Enjoy a warm and comforting bowl of Panera’s Broccoli Cheddar Soup. This recipe recreates the classic soup at home.
Ingredients

- 1/4 cup butter
- 1/2 medium chopped onion
- 1/4 cup flour
- 2 cups half-and-half cream
- 2 cups low-sodium chicken stock or broth
- 1/2 lb broccoli, (about 3 cups), chopped
- 1 cup carrot, julienned
- 1/8 teaspoon nutmeg
- 8 ounces grated sharp cheddar cheese, (2 cups)
- salt and pepper
Instructions
- Melt butter and saute onion until soft. Sprinkle flour over the mixture. Cook and stir for 1-2 minutes.
- Whisk in half-and-half cream and chicken stock or broth. Bring to a boil, then reduce heat to medium.
- Add broccoli and carrot. Cook over medium-low heat for 20-25 minutes or until tender.
- Add salt and pepper. Blend 1 cup of soup for a smoother texture. Return to low heat and add cheddar cheese. Stir in nutmeg if desired.
- Serve with crusty bread.
Notes
- For a smoother soup, blend a portion before adding cheese.
- Use low heat when adding cheese to prevent a grainy texture.
- Nutmeg enhances the flavor but is optional.
