Instructions
- Prepare the Filling: In a large bowl, beat peanut butter and softened butter until smooth and creamy.
- Add Sugar and Flavor: Mix in vanilla extract and gradually add powdered sugar until a thick dough forms.
- Shape the Eggs: Scoop portions of the mixture and shape into small egg forms. Place on a parchment-lined baking sheet.
- Chill: Refrigerate the peanut butter eggs for 30–60 minutes until firm.
- Melt the Chocolate: In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
- Dip the Eggs: Using a fork, dip each peanut butter egg into melted chocolate until fully coated. Let excess chocolate drip off.
- Set: Place dipped eggs back onto parchment paper and refrigerate until chocolate hardens.
