Description

Healthy and delicious cookies made with peanut butter, Greek yogurt, and honey.


Ingredients

Scale
  • 1 cup natural peanut butter
  • ¾ cup Greek yogurt (full-fat preferred)
  • ½ cup raw honey
  • 1 large egg
  • 2 tsp vanilla extract
  • 1¼ cups whole wheat flour
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ½ tsp cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix peanut butter, Greek yogurt, honey, egg, and vanilla until smooth.
  3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
  4. Gradually mix dry ingredients into wet until just combined. Don’t overmix.
  5. Scoop dough using a 1.5 tbsp (#40) scoop and place 2 inches apart on the baking sheet.
  6. Flatten cookies slightly with a fork.
  7. Bake for 10–12 minutes. Rotate halfway through.
  8. Cool on pan for 5 minutes, then transfer to a wire rack.

Notes

  • Use natural peanut butter without added sugar.
  • Full-fat Greek yogurt provides the best texture.
  • Adjust honey to your desired sweetness.
