  • 1 cup grated apple (about 1 medium apple)
  • 2 eggs (or flaxseed meal for vegan option)
  • 1/4 cup apple sauce (or additional yogurt)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it lightly.
  2. Combine the whole wheat flour, oats, baking powder, baking soda, cinnamon, and salt in a large mixing bowl.
  3. Whisk together the Greek yogurt, honey, grated apple, eggs, apple sauce, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing; a few lumps are okay.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
