- 1/2 cup Greek yogurt (or dairy-free yogurt)
- 1/2 cup honey (or maple syrup)
- 1 cup grated apple (about 1 medium apple)
- 2 eggs (or flaxseed meal for vegan option)
- 1/4 cup apple sauce (or additional yogurt)
- 1 teaspoon vanilla extract (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it lightly.
- Combine the whole wheat flour, oats, baking powder, baking soda, cinnamon, and salt in a large mixing bowl.
- Whisk together the Greek yogurt, honey, grated apple, eggs, apple sauce, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing; a few lumps are okay.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a vegan option, use flaxseed meal instead of eggs and dairy-free yogurt.
- You can add nuts or dried fruit to the batter for extra flavor and texture.
