Description

A delicious and nutritious casserole packed with protein and the goodness of sweet potatoes.


Ingredients

Scale
  • 1 large sweet potato, peeled and diced
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 cup cooked chicken sausage, sliced
  • 6 large eggs
  • 1/4 cup milk
  • 1/4 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté sweet potato, onion, and bell pepper until softened.
  3. Add chicken sausage and cook for another 2 minutes.
  4. In a bowl, whisk eggs and milk. Season with salt and pepper.
  5. Pour egg mixture over the sweet potato mixture.
  6. Top with cheddar cheese.
  7. Bake for 20-25 minutes, or until set.

Notes

  • You can use any type of sausage you like.
  • Feel free to add other vegetables, such as spinach or mushrooms.
  • Store leftovers in the refrigerator for up to 3 days.
