A delicious and nutritious casserole packed with protein and the goodness of sweet potatoes.
Ingredients

- 1 large sweet potato, peeled and diced
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 cup cooked chicken sausage, sliced
- 6 large eggs
- 1/4 cup milk
- 1/4 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Sauté sweet potato, onion, and bell pepper until softened.
- Add chicken sausage and cook for another 2 minutes.
- In a bowl, whisk eggs and milk. Season with salt and pepper.
- Pour egg mixture over the sweet potato mixture.
- Top with cheddar cheese.
- Bake for 20-25 minutes, or until set.
Notes
- You can use any type of sausage you like.
- Feel free to add other vegetables, such as spinach or mushrooms.
- Store leftovers in the refrigerator for up to 3 days.
