Ingredients

- 1 cup gluten-free oat flour
- 1/2 cup pumpkin puree
- 1/4 cup protein powder
- 1/4 cup maple syrup
- 2 eggs
- 1/4 cup almond milk
- 1 tsp pumpkin pie spice
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix oat flour, protein powder, pumpkin pie spice, baking soda, and salt.
- In another bowl, whisk pumpkin puree, maple syrup, eggs, and almond milk.
- Combine wet and dry ingredients. Stir until just combined.
- Fold in chocolate chips, if using.
- Fill muffin liners 2/3 full.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Adjust maple syrup to your desired sweetness.
- Use any protein powder you like.
