Description

Enjoy these healthy and delicious pumpkin protein muffins. They are gluten-free and perfect for a guilt-free treat.


Ingredients

  • 1 cup gluten-free oat flour
  • 1/2 cup pumpkin puree
  • 1/4 cup protein powder
  • 1/4 cup maple syrup
  • 2 eggs
  • 1/4 cup almond milk
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix oat flour, protein powder, pumpkin pie spice, baking soda, and salt.
  3. In another bowl, whisk pumpkin puree, maple syrup, eggs, and almond milk.
  4. Combine wet and dry ingredients. Stir until just combined.
  5. Fold in chocolate chips, if using.
  6. Fill muffin liners 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • Adjust maple syrup to your desired sweetness.
