Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (15-ounce) can pumpkin puree
  • 1 (15-ounce) can white beans, rinsed and drained
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and red bell pepper and cook for another 3 minutes.
  3. Stir in pumpkin puree, white beans, diced tomatoes, and vegetable broth.
  4. Add chili powder, cumin, smoked paprika, salt, and pepper. Bring to a simmer.
  5. Reduce heat and simmer for 15-20 minutes, stirring occasionally.
  6. Serve hot with your favorite toppings.

Notes

  • Adjust the amount of chili powder to your preference.
  • For a spicier chili, add a pinch of cayenne pepper.
  • You can use any type of white bean, such as cannellini or Great Northern beans.
  • This chili can be made in a slow cooker. Cook on low for 4-6 hours.
