- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

- 1 lemon, juiced and zested
- 2 cloves garlic, minced

- 1/4 teaspoon black pepper
- 2 cups cooked rice or quinoa
- 1 cup mixed greens
- 1/2 cup cherry tomatoes, halved

Instructions
- In a bowl, combine chicken, olive oil, lemon juice, lemon zest, garlic, herbs, salt, and pepper. Marinate for at least 15 minutes.
- Heat a skillet over medium-high heat. Add the marinated chicken and cook until cooked through, about 5-7 minutes.
- In a bowl, combine cooked rice or quinoa, mixed greens, cherry tomatoes, and cucumber.
- Top with the cooked lemon herb chicken. Serve immediately.
