Instructions
- Preheat oven to 375°F (190°C).
- Whisk eggs with salt and pepper.
- Combine quinoa, vegetables, and meat in a bowl.
- Divide mixture into four oven-safe bowls.
- Pour egg mixture over each bowl.
- Top with cheese.
- Bake for 15-20 minutes, or until eggs are set.
