Ingredients

  • 2 carrots, chopped
  • 2 celery stalks, chopped

  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup all-purpose flour
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned.
  3. Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
  4. Stir in garlic and cook for 1 minute more.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat and simmer for 15 minutes, or until chicken is cooked through.
  7. In a separate bowl, whisk together heavy cream and flour until smooth.
  8. Slowly pour cream mixture into the soup, stirring constantly.
  9. Bring to a simmer and cook until thickened, about 5 minutes.
  10. Stir in parsley, salt, and pepper.
