Ingredients

Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots with olive oil, salt, and pepper.
- Spread carrots in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until tender and slightly caramelized.
- Transfer carrots to a serving dish.
- Top with ricotta cheese and fresh herbs.
- Serve immediately.
Notes
- You can add a drizzle of honey or maple syrup for extra sweetness.
- Feel free to use any herbs you like.
