Instructions
- Preheat oven to 400°F (200°C).
- Cut the squash in half lengthwise and remove the seeds.
- Slice the squash into 1/2-inch thick pieces.
- In a bowl, toss squash with olive oil, salt, and pepper.
- Arrange squash in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until tender and slightly browned.
