Description

Enjoy a simple and delicious plantain fufu and okra soup. This meal is easy to prepare and satisfying.


Ingredients

  • 2 green plantains
  • 1 cup okra, chopped
  • 1/2 cup spinach, chopped
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 1 tablespoon palm oil
  • Salt and pepper to taste

Instructions

  1. Peel and chop the plantains.
  2. Boil the plantains until soft.
  3. Pound the plantains into a smooth dough (fufu).
  4. In a separate pot, heat palm oil and sauté onion and bell pepper.
  5. Add okra and spinach, cook for 5 minutes.
  6. Pour in vegetable broth and simmer for 10 minutes.
  7. Season with salt and pepper.
  8. Serve the okra soup with the plantain fufu.
