- 2 green plantains
- 1 cup okra, chopped
- 1/2 cup spinach, chopped
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cups vegetable broth
- 1 tablespoon palm oil
- Salt and pepper to taste
Instructions
- Peel and chop the plantains.
- Boil the plantains until soft.
- Pound the plantains into a smooth dough (fufu).
- In a separate pot, heat palm oil and sauté onion and bell pepper.
- Add okra and spinach, cook for 5 minutes.
- Pour in vegetable broth and simmer for 10 minutes.
- Season with salt and pepper.
- Serve the okra soup with the plantain fufu.

- Adjust the amount of pepper to your preference.
- You can add other vegetables to the soup.
