Description

Easy slow cooker lentil soup is the ultimate set-it-and-forget-it meal. This soup is hearty, healthy, and packed with flavor. It’s vegan and gluten-free, so everyone can enjoy a bowl.


Ingredients

Scale
  • 1 pound dried brown lentils
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 medium celery stalks, diced
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 8 cups vegetable broth
  • 1 (14.5 ounce/411 gram) can diced tomatoes
  • Salt and pepper, to taste

Instructions

  1. Place the lentils, onion, carrots, celery, garlic, cumin, coriander, and vegetable broth into a (3 quart or larger) slow cooker.
  2. Stir everything, cover, and turn on the slow cooker.
  3. Cook the soup on high for 2.5 to 3.5 hours, or on low for 5 to 6 hours, until the lentils are soft and the vegetables are tender.
  4. Stir in the tomatoes and let the soup cook for about 20 minutes longer, just to heat up the tomatoes.
  5. Season the soup with salt and pepper to taste.
  6. Serve.

Notes

  • Slow cooker should have a 3 quart capacity or larger.
