Description

Enjoy a hearty and flavorful Slow Cooker Stuffed Pepper Soup with Minute Rice. This easy recipe combines classic stuffed pepper flavors in a comforting soup.


Ingredients

  • 1 lb ground beef, browned and crumbled
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 sweet yellow onion, diced
  • 2 garlic cloves, minced
  • 30 oz chicken broth
  • 15 oz can tomato sauce
  • 14.5 oz can fire-roasted diced tomatoes
  • 1 tsp oregano
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup uncooked Minute Brand Rice
  • Mozzarella cheese, for topping

Instructions

  1. Add ground beef, bell peppers, onion, garlic, chicken broth, tomato sauce, diced tomatoes, oregano, basil, salt, and pepper to the slow cooker. Stir.
  2. Place the lid on the slow cooker.
  3. Cook on HIGH for 4 hours or LOW for 8 hours.
  4. Add the uncooked minute rice. Stir.
  5. Replace the lid and cook on HIGH for 20 minutes more.
  6. Stir and serve.
  7. Serve topped with mozzarella cheese if desired.

Notes

  • Minute Rice is parboiled rice that is dried.
  • Adjust seasoning to your preference.
  • Use Italian seasoning instead of oregano and basil.
