- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sweet potato, chickpeas, red onion, and bell peppers with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Spread the mixture in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized.
