Description

Enjoy flavorful Spiced Mediterranean Chicken Bowls. This recipe combines spiced ground chicken with rice, roasted chickpeas, and fresh toppings, all complemented by a spicy roasted red pepper feta dip.


Ingredients

Scale
  • 2 tablespoons extra virgin olive oil
  • 1 pound ground chicken (or turkey or sub beef or lamb!)
  • half medium to large yellow onion, finely diced
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • half teaspoon dried thyme
  • Lots of freshly ground black pepper
  • 2 cups of cooked rice of choice (I love jasmine or brown rice!)
  • 1 cup roasted chickpeas (I love Biena) or regular rinsed and drained chickpeas work too!
  • 4 Persian cucumbers, halved lengthwise and sliced
  • Pickled red onion
  • Warm torn pita, for scooping
  • Extra virgin olive oil
  • Extra feta crumbled
  • Fresh mint leaves
  • Fresh chopped parsley
  • half batch Spicy Roasted Red Pepper Feta Dip

Instructions

  1. Make the Spicy Roasted Red Pepper Feta Sauce. You’ll only need half batch for the bowls, save the rest for snacking!
  2. Cook the chicken: Add olive oil to a large skillet over medium high heat. Add onions and cook for 3 to 5 minutes until softened. Push onions to the edges, add ground chicken, breaking it apart. Season with salt, garlic powder, cumin, oregano, paprika, turmeric, thyme and black pepper. Cook until fully cooked, about 5 to 7 minutes.
  3. To serve: Add feta sauce to one side of a bowl. On the other side, add rice. Top with chickpeas over feta sauce and spiced ground chicken in the middle. Top with cucumbers and pickled red onion. Garnish with olive oil, feta, mint and parsley. Serve with warm pita bread and enjoy!

Notes

  • Adjust spices to your taste.
  • Use your favorite type of rice.
  • Add other vegetables as desired.
