- 1 pound ground turkey
- 1 head cauliflower, riced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño, minced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- Optional: Cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook, breaking it apart, until browned. Drain any excess grease.
- Add onion, garlic, bell pepper, and jalapeño to the skillet. Cook until softened, about 5 minutes.
- Stir in cauliflower rice, chili powder, cumin, and cayenne pepper. Season with salt and pepper.
- Cook until cauliflower rice is tender, about 5-7 minutes.
- Garnish with cilantro, if desired. Serve hot.
Notes
- Adjust the amount of jalapeño and cayenne pepper to your preferred spice level.
- For a vegetarian option, substitute ground turkey with plant-based crumbles.
- Cauliflower rice can be store-bought or homemade.
