Delicious and nutritious stuffed sweet potatoes.
Ingredients

- 2 large sweet potatoes
- 1 cup cooked black beans
- 1/2 cup cooked quinoa
- 1/2 cup corn
- 1/4 cup salsa
- 1/4 cup shredded cheddar cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Wash sweet potatoes and pierce several times with a fork.
- Bake for 45-60 minutes, or until soft.
- Let cool slightly, then slice lengthwise.
- Scoop out some of the flesh, leaving a 1/4 inch border.
- In a bowl, mix sweet potato flesh, black beans, quinoa, corn, and salsa.
- Season with salt and pepper.
- Stuff the mixture back into the sweet potato skins.
- Sprinkle with cheese (optional).
- Bake for another 10-15 minutes, or until heated through and cheese is melted.
Notes
- You can customize the fillings to your liking.
- Add protein like shredded chicken or ground beef.
- Top with avocado, sour cream, or Greek yogurt.
