Description

Delicious and nutritious stuffed sweet potatoes.


Ingredients

Scale
  • 2 large sweet potatoes
  • 1 cup cooked black beans
  • 1/2 cup cooked quinoa
  • 1/2 cup corn
  • 1/4 cup salsa
  • 1/4 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash sweet potatoes and pierce several times with a fork.
  3. Bake for 45-60 minutes, or until soft.
  4. Let cool slightly, then slice lengthwise.
  5. Scoop out some of the flesh, leaving a 1/4 inch border.
  6. In a bowl, mix sweet potato flesh, black beans, quinoa, corn, and salsa.
  7. Season with salt and pepper.
  8. Stuff the mixture back into the sweet potato skins.
  9. Sprinkle with cheese (optional).
  10. Bake for another 10-15 minutes, or until heated through and cheese is melted.

Notes

  • You can customize the fillings to your liking.
  • Add protein like shredded chicken or ground beef.
  • Top with avocado, sour cream, or Greek yogurt.
