Description

Ingredients

  • 3 cups Granny Smith Apples, diced
  • 1 cup White Sugar
  • 1 tablespoon Cornstarch
  • 1 teaspoon Ground Cinnamon
  • 1/2 cup Dark Brown Sugar
  • 1/2 cup Unsalted Butter, room temperature
  • 1 cup Greek Yogurt
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Kosher Salt
  • 2 large Eggs, room temperature
  • 1 teaspoon Ground Cinnamon (for cinnamon sugar layer)
  • 1/4 cup White Sugar (for cinnamon sugar layer)
  • 1 cup Powdered Sugar (for glaze)
  • 24 tablespoons Milk (for glaze)
  • 1 teaspoon Vanilla Extract (for glaze)

Instructions

  1. Combine diced apples, white sugar, cornstarch, and cinnamon in a saucepan. Cook until apples soften and mixture thickens (5-7 minutes). Cool.
  2. Combine cinnamon and sugar in a bowl for the cinnamon sugar layer. Set aside.
  3. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  4. Cream butter and sugar in a bowl until fluffy (3-5 minutes).
  5. Mix in eggs until smooth.
  6. Whisk flour, baking powder, baking soda, and salt in another bowl. Gradually add to wet batter, alternating with yogurt, until combined.
  7. Pour half the batter into the pan. Spread apple mixture, sprinkle with half the cinnamon sugar, add remaining batter, and sprinkle with remaining cinnamon sugar.
  8. Bake for 35-40 minutes, or until a toothpick comes out clean.
  9. Whisk powdered sugar, milk, and vanilla for the glaze. Adjust milk for thickness.
  10. Poke holes in the warm cake and pour glaze over it. Cool slightly before serving.

Notes

  • Use room-temperature ingredients for better mixing.
  • Adjust glaze thickness by adding more or less milk.
