Ingredients

  • 1/4 cup black beans
  • 1/4 avocado, sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato with olive oil, cinnamon, and nutmeg.
  3. Roast for 20-25 minutes, or until tender.
  4. In a bowl, combine roasted sweet potato, quinoa, and black beans.
