- 1 medium sweet potato, peeled and cubed
- 1 tablespoon olive oil
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup cooked quinoa
- 1/4 cup black beans
- 1/4 avocado, sliced
- 1 fried egg
- Optional toppings: salsa, hot sauce, cilantro
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potato with olive oil, cinnamon, and nutmeg.
- Roast for 20-25 minutes, or until tender.
- In a bowl, combine roasted sweet potato, quinoa, and black beans.
- Top with avocado and a fried egg.
- Add optional toppings as desired.
Notes
- You can use leftover cooked sweet potato to save time.
- Adjust spices to your preference.
