Description

A hearty and flavorful taco cornbread casserole, perfect for a family dinner.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1 box (8.5 ounces) cornbread mix
  • 1 cup milk
  • 2 large eggs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a skillet over medium heat. Drain excess grease.
  3. Stir in taco seasoning and salsa. Simmer for 5 minutes.
  4. In a large bowl, combine corn, black beans, and 1/2 cup of cheddar cheese.
  5. In a separate bowl, mix cornbread mix, milk, and eggs until just combined.
  6. Pour the corn and bean mixture into a greased 9×13 inch baking dish.
  7. Top with the ground beef mixture.
  8. Pour the cornbread batter over the beef layer.
  9. Sprinkle with the remaining 1/2 cup of cheddar cheese.
  10. Bake for 20-25 minutes, or until cornbread is golden brown and a toothpick inserted into the center comes out clean.
  11. Let cool slightly before serving.
